The Falcon HC-36HPI is a mobile proofer cabinet designed for professional kitchens, featuring a full-height, insulated heater/proofer construction. Measuring 23"W x 33.15"D x 66.5"H, it is built from heavy-duty aluminum for durability. This versatile unit offers a combination function for proofing and heating, accommodating up to (36) 18" x 26" pans.
In proof mode, it maintains humidity levels from 30% to 95%, while the heat mode reaches nominal temperatures up to 185°F (85°C). An air baffle and circulating air blower ensure even heat distribution throughout the cabinet. Mobility is enhanced with (2) swivel plate casters and (2) swivel/brake plate casters featuring polyurethane tread for easy maneuverability. The unit operates at 1500 watts on a 120v/60/1-ph power supply and is certified by cETLus, UL, and NSF for safety and performance.
