The Metro C517-PFC-LA is a mobile proofer cabinet designed for efficiency and convenience in food preparation. It includes a removable bottom mount control module with a thermostat adjustable up to 120°F, ensuring optimal proofing conditions. The cabinet accommodates up to 27 standard 18" x 26" pans with lip load slides positioned on 1 1/2" centers for easy access. Equipped with 5" casters, two of which have brakes for stability, this aluminum cabinet is built for mobility and durability.
