Description
The Metro C539-MFC-4 is a mobile heated holding and proofing cabinet designed for optimal food preservation and preparation. This full-height cabinet features Red Insulation Armour™ for enhanced thermal efficiency and moisture retention. The clear polycarbonate door allows for easy visibility of contents while maintaining insulation. Equipped with a removable bottom mount control module, it offers precise temperature control up to 200°F and adjustable moisture settings to create the ideal environment for proofing dough or holding cooked foods. The cabinet includes fixed wire slides on 3" centers, accommodating up to 18 full-size 18" x 26" pans or 34 half-size 12" x 20" x 2 1/2" pans. Mobility is ensured with 5" casters, two of which are equipped with brakes for stability during use. Constructed from durable aluminum, the cabinet operates on 120v/60/1 ph with a power output of 2000 watts and 16.7 amps. It meets cULus and NSF standards, making it a reliable choice for commercial kitchens.
